In need of a treat? A dear friend of my late grandmother used to make these. They are incredibly rich and just what you need sometimes (with a cup of coffee, I think!)… I would describe them as a sweet white brownie topped with meringue.
Base Brownie
- 1/2 cup butter
- 2 egg yolks
- 1 tsp. vanilla
- 1 cup white sugar
- 1 tsp. baking powder
- Pinch of salt
- 1 1/2 cups white flour
Meringue topping
- 2 egg whites, beaten stiff
- 1 cup brown sugar
- 1 tsp vanilla
Mix together brownie base and spread over bottom of pan. Then mix the egg whites, beaten, with the brown sugar and vanilla. Spread this over first mixture. Bake in a slow oven (300 degree) for 30 minutes. Cut into squares.
